Creamy avocado takes the place of butter in these fudgy brownies, paired with cool minty chunks of Andes candies. Rich but refreshing.
Ingredients (avg. cost $11 total):
1 ripe avocado, mashed ($1.50)
1 cup sugar ($1)
2 eggs ($0.60)
1 tsp vanilla extract ($0.50)
½ cup cocoa powder ($1.50)
½ cup flour ($0.50)
½ tsp baking powder ($0.25)
Pinch of salt (pennies)
1 cup chopped Andes Mints ($5)
Instructions:
Preheat oven to 350°F (175°C) and grease an 8x8 pan.
Mash avocado until smooth, then whisk with sugar, eggs, and vanilla.
Stir in cocoa, flour, baking powder, and salt. Mix until just combined.
Fold in Andes Mints.
Spread into pan and bake 25–30 minutes.
